The tamarind is best described as sweet and sour in taste, and is high in acid, sugar, B vitamins and, interestingly for a fruit, calcium. It is widely distributed throughout the tropical belt, from Africa to South America, and throughout South East Asia, Taiwan and as far as China. In the 16th Century, it was heavily introduced to Mexico, as well as Central and South America, by Spanish and Portuguese colonists, to the degree that it became a common ingredient in everyday living. In Mexico the drinks are called Aguas Frescas or "Fresh Waters."

Tamarind is harvested by pulling the pod from its stalk. Such trees will usually produce fruit within three to four years if provided optimum growing conditions. It is used in such desserts as jams, sorbets, ice creams, and also as a natural laxative but it is best known in making blended juices or sweetened drinks.
